More than any other nation in the world, the United States was founded and grew as a cultural melting pot. It is food, above all other aspects of cultural heritage, that represents Americans’ ties to their ancestral roots. More than language, food stays with us through generation after
generation. Whether families come from Asia, Europe or Latin America — whether they feast on kimchi or foie gras, on gyozas or pupusas, on sashimi or chicatanas — their unique styles and flavors have become an integral element in 21st-century restaurants across America.
Food (and wine) have historically brought people together. At 5 Fusion & Sushi Bar, we are proud to nurture an understanding of unfamiliar cultures through the food we serve and share.
Chef Joe Kim has prepared a meal that blends the cuisines of Korea, Japan, China and India with those of Britain, France, Russia and Mexico. And what could be more American than that?

King crab bao (sweet seafood in a steamed bun)
Shepherd’s pie gyoza (an English favorite in pot stickers)
Turkey & cranberry pierogi (the best kind of Russian collusion)
Japanese hamachi and suzuki marinated in
effervescent Korean pear and juice
Kimchi-style Cabbage Soup
A velouté of scorched savoy cabbage
with smoked kimchi purée
Suzuki (striped bass), raw, fried, grilled and cured
Indian Butter Chicken
Chicken roulade with onion, potato and radish, Indian spices
Fois-Camole (rhymes with Guacamole)
A mole of cashews, chocolate and fois gras, served with
Oregon Iberico pork and chicatana( Mexican flying ants)
Squab served with Szechuan-style tofu and
fermented black beans
Mom’s Bundt Cake
Baked in a mold with chocolate, sesame and espresso.
As a child, Chef Joe looked forward to this European
specialty for every birthday.

5 Fusion and Sushi Bar prioritizes giving back to the community and the
programs that make Central Oregon such a wonderful place to live and thrive.
Since our inception in 2009, we've been able to donate over $400,000 to important charities such as KIDS Center, Saving Grace, The Tower Theatre, Big Brothers/Big Sisters of Central Oregon, the Ronald McDonald House, Deschutes Children's Foundation, Abilitree, Volunteers in Medicine and many more.
